Recipe Roundup: Soups and Stews

Leslie is hosting this months Recipe Roundup! I am so excited that Fall is here and it's time for soup and chili!

Here is a recipe for Taco Soup:

1 lb ground beef
1 onion
1 pkg Taco seasoning mix
1 pkg Hidden Valley Ranch mix
1 can pinto beans
1 can whole kernel corn
1 can stewed tomatoes (Mexican flavor if you like)
1 can chili hot beans

Brown beef and onion. Add taco mix and HVR mix to meat. Add all vegetables (with liquids) and simmer 20 minutes. Serve over tostitoes or Fritos and top with shredded cheddar cheese and sour cream!

I love soups like this one!! I'll have to check the ranch mix, though. I bet that stuff will mean Benjamin can't have it. Maybe I can substitute?

You could probably put this in the crock pot too after you have browned the beef, eh?

Jenn, I can't believe you posted this recipe. I can't find my copy since the move and I was standing in the aisle at Walmart today trying to remember what was in it. Thanks. By the way, I'll follow up on that email tomorrow, the day got away from me! Miss ya, love ya, L

I love this soup. We made it all the time last winter. Although, I don't think I was supposed to eat quite as many tortilla chips with it as I did.
Hum! Maybe that's where all those extra pounds came from.
